I guess the new square beam will go full span and eliminate the existing middle post, but I don't understand why they need to dig below the floor along this inner beam line? Isn't that all fill at this stage?

The steel is literally like a picture frame. It is bolted together top, bottom and two sides. So the bottom section has to be sunk in the floor with concrete poured on top. I suppose it is to ensure that they don't need to rely on slippage of the foundations on one side or the other if an existing loft is built above in more brick. The steel frame remains a frame regardless of the foundations crumbling. Having said that, the builders think it is a bit of overkill, but this company is known for doing things right and guaranteeing their work for 10 years. So we are going with it.
Having said that, there was an existing steel running across the house already from the old extension. It was held up by a brick post in the middle and another on one of the side walls. The idea was passed by the inspector as to just building another post out of brick on the other side and removing the middle post. But brick is not as strong as steel and the size requirements of the post would have been way too big for the space. The steel was the smaller alternative.
It sounds like a good route to have taken, and now you will have more interior space without the bulky columns to contend with.
